Ingredients for four people:
- 400 gr. from Cod crumbled
- 8 eggs
- 1 onion
- 1 Red pepper
- 1 bunch of coriander
- Olive oil
Preparation of the fresh cod omelette
- The preparation of this dish begins days before, when you will have to desalt the cod by soaking it in a bowl of water. Change it every eight hours for two days and on the day of preparation let it drain in a colander to dry.
- Peel, wash and cut the onion into cubes. Then gin the pepper and cut it in the same way. Wash the coriander with plenty of water and vinegar to disinfect it and chop the leaves finely.
- Add a little olive oil to a frying pan. When hot, sauté the onion over medium heat until golden brown, then add the bell pepper. Sauté for five minutes over medium heat or until you notice that the pepper is tender.
- Add the flaked cod to the pan and salt to taste. Mix together with the onion and pepper and sprinkle the crumbled coriander on top. Cover the pot and cook the cod for five minutes over medium heat.
- Meanwhile, add the eight eggs to a bowl and beat them with a pinch of salt until everything is combined properly. Add the eggs to the pan and allow the omelette to form over medium heat and with the pan covered.
- When you notice that it has increased in volume and there is no liquid on the surface, you have to turn it over. Herein lies the question kit. We recommend that you help yourself with a plate and turn the tortilla with a quick and agile movement, otherwise it may slip.
- Then, put the tortilla back in the pan, lower the heat and wait for it to be done on that side.
