Ingredients

1 zucchini
1/2 cauliflower
1 yolk egg
Salt
Pepper
Oregano
Grated cheese
Olive oil

Preparation of zucchini lasagna

You are going to start by washing the cauliflower well, since this will help eliminate impurities that the plant may contain when it has been exposed to the open air, and cut it into bouquets. Now you have to steam it, for which you will have to fill the bottom of a saucepan with water, which does not even reach half, place the cauliflower in a basket and let the steam cook it. If you can, cover the saucepan, unless you have something that can be used to steam well.
For zucchini, you cut it in half and peel it. Cut the two halves into slices that are not too thick.
If you have a griddle, you have to fry the grilled zucchini with a little oil and salt. If not, you will have to do it in a pan, being very careful that the zucchini does not burn.
The cauliflower should already be ready, so you put it in the blender glass, with a little water and mash it well until it becomes a puree.
You put this puree in a pan, heat it over low heat. When it is hot, you add the egg yolk and beat well until integrated.
Check how it tastes, to see if you have to add salt and pepper. Stir and add a little oil to make it a little looser.
Now is the time to assemble the lasagna, for which place a layer of zucchini, then the puree on top, another of zucchini and then another of puree … so on until it is the size you want.
Gratin with the grated cheese, the type that you like the most and put in the oven so that the cheese is well browned.
Take out and let it rest a little, adding oregano on top.
