  • 4 zucchini little ones
  • 1/2 cucumber
  • 1/2 onion
  • 1/2 green pepper
  • 1 tooth of Garlic
  • 3 slices of bread from the day before
  • 2 basil leaves
  • 4 tablespoons of sherry vinegar
  • 6 tablespoons olive oil
  • 1/2 glass of water
  • Salt to taste
  • 2 eggs boiled and chopped (optional)
  • Chopped Cherrys Tomatoes (optional)

Preparation of zucchini gazpacho

  1. We start by preparing all the ingredients for our zucchini gazpacho: Peel the pepper and cut it into medium pieces. Then cut the onion in two, previously peeled and washed.
  2. Cut the zucchini into medium pieces without peeling them. Cut the cucumber into four parts and keep it with everything and skin. Peel the garlic clove and remove the germ so that your gazpacho does not repeat itself. You have it all? We continue!
  3. Add the water to the blender glass along with the onion, pepper, garlic and cucumber. Blend everything until you have a homogeneous mixture.
  4. Add the zucchini with the vinegar, olive oil, bread and salt to taste. Blend everything until you have a thick, liquid mixture. If necessary, you can add more water so that all the ingredients are processed correctly.
  5. When you have the ideal consistency of the gazpacho, rectify the salt. Then pour the contents of the blender glass into a glass jar and refrigerate for 2 hours.
  6. After time your zucchini gazpacho will be ready to enjoy. If desired, serve each serving with small pieces of hard-boiled egg and cherry tomatoes on the top. Enjoy your meal!
