Ingredients:

For the mass:

  • 600 gr. from Yucca
  • 1 egg whole
  • 2 yolks
  • 45 gr. cornstarch
  • 1/8 cup butter
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon chopped fresh coriander
  • 1/2 tablespoon of sugar
  • Salt

For the filling:

  • 500 gr. boneless chicken thighs
  • 1 onion
  • 2 teeth of Garlic
  • 1 red bell pepper
  • 2 tomatoes
  • 10 chopped stuffed olives
  • 3 tablespoons olive oil
  • Salt and pepper

Preparation of cassava empanadas with chicken

  1. Your first step is to cut the chicken into small pieces and season it with salt and pepper to taste. Reservation.
  2. Wash all the vegetables and dice them. Heat the oil, add the onion and let it poach. When it is transparent add the garlic and pepper. Stir and cook for 5 minutes over medium heat.
  3. Add the tomatoes, olives and a little salt and cook, stirring occasionally for 5 more minutes. When the stew is ready, add the chicken, stir to integrate and cook for 15 minutes over medium-low heat.
  4. While the filling is cooking, you are going to prepare the dough. Cut the yuca into medium pieces and peel it. Wash it and boil it with water in a large pot for 15 minutes, add the salt to taste after 5 minutes of cooking.
  5. When the yuca is tender, drain the water with a strainer, remove the central fiber and the hard parts and mash it by hand or with a processor.
  6. Once the yuca is pureed, mix it with 1 whole egg, 2 yolks, cornstarch, butter, garlic powder (optional), coriander, sugar and salt. Mix well and finish kneading with your hands (You can add more cornstarch if you need to remove moisture from the dough).
  7. Place a plastic sheet or plastic wrap on a table, grease it with a little oil and put a ball of dough on it. Flatten it well until it is shaped like a circle.
  8. Add a tablespoon of filling in the middle, close in a semicircle. Shape it with a plate and remove the leftovers.
  9. When you have all the yuca empanadas with chicken armed, fry them in very hot vegetable oil until golden brown. Enjoy your meal!
