  • 1 kg. from aubergines
  • 1 tablespoon of vinegar
  • 3 tablespoons of extra virgin olive oil
  • 1 tablespoon of dried parsley
  • 1 dehydrated chives
  • 1 tablespoon dehydrated garlic
  • 100 gr. grated cheese
  • Salt

Preparation of the roasted aubergines in the pan

  1. First of all, you must wash the aubergines well under tap water. Then cut them lengthwise into 6 sheets. You are going to use only the 4 central ones, so you can take advantage of the rest to make another dish or freeze them for another time.
  2. Put the aubergine slices on aluminum foil, and add salt, to your liking.
  3. Now you can start preparing the vinaigrette: To do this, put the parsley, garlic and chives in a bowl. Add a little water, about 4 tablespoons, and wait about 5 minutes for these ingredients to rehydrate.
  4. After this time, add 3 tablespoons of extra virgin olive oil, and another of vinegar. Stir so that all the ingredients are mixed well, and leave them reserved.
  5. Next you must pass the aubergines through absorbent kitchen paper, to dry them from the juice that they will have released.
  6. Pour a little extra virgin olive oil in a pan, just enough so that the aubergines do not stick, and put it to heat over medium heat.
  7. When the oil reaches the desired temperature, go passing the aubergines to roast them. As you make them, transfer them to a large plate, and pour the vinaigrette well distributed over them. Add the grated cheese on top.
  8. Transfer the dish to the microwave, and set it for 1 minute. Check if the grated cheese has already melted, and if not, put it in for a few more seconds.
