- two Red peppers
- 4 tomatoes
- 2 or 3 teeth of Garlic
- Olive oil

Preparation of roasted aubergines with peppers
- To prepare a juicy plate of roasted aubergines with peppers, the first thing you have to do is put the oven to preheat, to a temperature of 250º, and with heat both above and below.
- Then wash the tomatoes well, rinsing them under running water. Do the same with the peppers and aubergines, and drain them well. Place them on a roasting pan that has a grid, so that they also drain their juice.
- When the oven has reached temperature, place the pan on the bottom. Go checking from time to time, and when the vegetables are well done on one side, turn them over so that they are done on the other. Repeat successively, until they are done on all sides.
- How long the vegetables take to roast depends on the oven, but it could be around 20 minutes total. Once they have all their skin somewhat burned and well wrinkled, they are ready. Turn off the oven and remove the roasting pan.
- Wait a bit and when they don’t burn, peel all the vegetables and remove the seeds. Cut them into elongated strips, with the help of scissors or a wooden board and a sharp knife, whichever is more comfortable for you. Now transfer them to a large container, preferably glass or clay.
- Peel the garlic cloves, and chop them as finely as possible. Add them to the container, along with a splash of olive oil, and salt to taste. Stir all the ingredients, and mix them well.
- Put the container in the fridge, and wait for the vegetables to cool down, as this dish tastes much better that way.
