- In a bowl, beat the eggs until they are well broken, without lumps. We are adding the sugar while beating, until we achieve a whitish mixture. It is recommended to use electric rods, because this way it will cost us less to achieve the mixture.
- Then we grate the lemon peel over the bowl and add the yeast envelope. We stir everything so that the ingredients are absorbed. Finished, we add the glass of olive oil along with 2 glasses of mandarin juice. Again we mix everything until the ingredients are not distinguished and the flavor absorbs well.
- At this point we turn the oven to 180º C so that it is already hot when we finish the recipe.
- We pour the two yogurts and again stir, so that it mixes with everything. Now you just need to add the flour and stir everything to mix everything well until you get a kind of cream. You can do the latter with the blender if you want to go faster.
- Once the fine and homogeneous cream is obtained, we divide it into the muffin molds, without completely filling them. We distribute them on the tray and in the oven.
- It will take 15-20 minutes to be ready. We recommend pricking them to check that they are well done inside.
- When you take them out you will have to let them rest a bit before you take them out of the mold. And you will be ready to eat.
