  • 4 teeth of Garlic
  • 50 gr. sweet paprika
  • 2 dessert spoons of cumin
  • 2 dessert spoons of ground black pepper
  • 2 tablespoons ground coriander
  • 4 nails
  • ½ dessert spoon of nutmeg
  • 4 chillies
  • 1 lemon
  • 1 splash of white wine
  • 1 branch of cinnamon
  • 1 branch of fresh parsley
  • Oil

Preparation of the yellow Moorish skewers

  1. To prepare some delicious yellow Moorish skewers at home, the first thing you have to do is put all the spices in a mortar, that is, turmeric, pepper, paprika, cumin, nutmeg, coriander, chillies, cloves and cinnamon. Mash everything very well so that it is perfectly mixed.
  2. If you want these skewers to be a little spicier, you can mix sweet paprika with hot paprika. We recommend that in any case you mix them, but that you do not use only hot paprika. Keep in mind that this recipe already includes chillies.
  3. Wash the sprig of parsley and add it to the previous mixture, along with the peeled garlic. Keep mashing, so that they mix well with the other ingredients.
  4. Squeeze the lemon and pour it over the mixture along with a splash of white wine. Stir all the ingredients.
  5. Transfer the meat to a container and add the mixture you just prepared. Pour in a generous stream of olive oil and stir everything. When the meat is well soaked in this mixture, let it marinate for a whole day in the fridge.
  6. The next day, place the meat on skewers, and make them fried, grilled or even in the oven, at a temperature of 180ºC. If you make them grilled, 15 minutes will be enough, in the oven they will need about 20. As soon as this time has passed, your yellow Moorish skewers will be ready.
