- 1 endive.
- 100 gr. from Cod.
- 2 cans of black olives.
- 2 cans of tuna.
- 2 cans of anchovies.
- Romesco sauce.
Xatonada sandwich recipe.
- The first thing we will do is toast the slices of bread that we will use for this dish. When they are toasted, we will go on to make the dish.
- Cod must, of course, be desalted. If you have not bought it already desalted, you will have to soak it in water for at least 24 hours, changing the water twice, so that it releases all the salt. Once ready, we cut it into pieces that we put in a bowl. We take a little and put it on the bread.
- We wash the endive well, so that it releases all the impurities it may contain, and we chop it up. We put a little on the cod.
- Next, we take out the contents of the cans and we take a little of each one to place it on the bread. We cover with romesco sauce and close the bread. Repeat this process until you have the sandwiches for the whole family or our guests.
- The sauce does not have to be bought, if you want to prepare it at home it is very easy to make: we crush about 15 almonds and about 15 hazelnuts in the mortar, until they form a pastita. We add this to the blender glass, along with 1 pepper, a little salt, 2 chopped tomatoes and beat everything until the ingredients are unified. Now we add a little vinegar, olive oil, black pepper and a little sweet paprika. Beat again until the sauce is formed, which we will leave to rest for a couple of hours in the fridge.
