The xatonada of the guard it is a heavy dish, and complete. With sausage and potato omelette, this is a dish that will fill you up and keep you full of energy throughout the day.
- 1 sausage per person.
- 100 gr. of white beans by people.
- 1 tortilla potato with onion.
- 1 tooth of Garlic.
- 1 can of anchovies.
- Romesco sauce or xató sauce.
- 1 Cod desalted.
- 1 endive.
- 1 can of olives.
- 1 can of anchovies.
Recipe for xatonada of the guard.
- In a frying pan, with a little oil, we will fry the sausages, piercing them from time to time so that they release the fat. When you see that they are well browned on the outside, remove them from the heat.
- In another pan, we are going to fry the garlic clove, finely chopped, and when it turns color, add the white beans. We stir from time to time so that they do not stick, and when they are browning, we put them in the pan where we made the sausages (which will already be done and we will have set them aside), so that they are impregnated with the fat that they released and thus take their taste. All this we put aside on another plate.
- The sauce can be bought ready-made, or we can make it ourselves at home. If you have bought it already made, you will get rid of the burden of having to make it, so, if it is the case, throw it in a bowl to use it when we need it.
- It is time to assemble the dish, so let’s get to it: the first thing is to chop the cod which, be careful, it has to be desalted. If not, you will have to soak it for 48 hours, changing the water every 12 hours. Once desalted, chop it up and spread it over the source you are going to use. We wash the endive, chop it and cover the cod with it.
- Next we add the olives, the anchovies and we cover all this with the sauce that we have prepared.
