  • 1 kg of precooked hominy corn
  • 500 grams of pork
  • 250 grams of pork head
  • 2 pork legs
  • 1 onion
  • 8 teeth of Garlic
  • 1 bay leaf
  • 1 red onion
  • 2 radishes
  • 1 lettuce
  • 1 avocado
  • 1 lemon
  • Salt
  • Pepper to taste

Preparation of white pozole

  1. To start preparing this white pozole, the first thing you have to do is wash the corn and the pork pieces that you are going to use with plenty of water.
  2. In a pot, add the pork meat previously chopped into pieces, the head and legs in four parts and then add as much water as necessary to cover all the pieces of meat.
  3. Now add the onion, garlic, bay leaf, a touch of salt and pepper and cook over medium heat for 45 minutes or until the meat is cooked.
  4. Remove the meat from the saucepan and set it aside. You have to leave the broth and add the corn to it. Leave it on the fire until it softens, that is, about eight minutes.
  5. When the corn is ready, put the pork back in the pot and add salt and pepper. Let cook for 20 more minutes over low heat.
  6. While the pozole is cooking, cut the red onion into julienne strips, the radish into small squares, the lettuce into strips and the avocado into slices. Reservation.
  7. When the 20 minutes are up, remove the pozole from the heat and pour it into deep plates. Add a little onion, radish, lettuce and avocado to each plate and, to finish, add a few drops of lemon juice. Voila! Your white pozole is ready!
