East Watermelon Gazpacho It is a delight and is much lighter and more refreshing than traditional gazpacho, as it does not contain bread and is prepared only with a tablespoon of oil. Best of all, it takes just 15 minutes to prepare and is a great way to vary our menu. Let’s prepare it!
If you are a lover of gazpachos, we take the opportunity to recommend this recipe for Beetroot gazpacho, a delicacy that you will want to eat daily, we warn you! That said, we don’t take any more time, gather the ingredients for the watermelon gazpacho and go to the kitchen.
- 500 gr of watermelon without skin
- 600 gr of tomato raw
- 30 gr of onion
- 40 gr of green pepper
- 1 tooth of Garlic
- 1 tablespoon of olive oil
- 2 tablespoons white wine vinegar
- Salt to taste
Preparation of the watermelon gazpacho
- To start preparing the watermelon gazpacho, cut the onion and green pepper into medium pieces. Then peel the garlic and eliminate the germ that it brings in the center to avoid that your gazpacho is very bitter.
- Cut the tomatoes into chunks and then add them to the blender glass along with the onion, bell pepper, and garlic. Blend until you have a homogeneous mixture.
- If the tomato shell is very thick or very dry, strain the contents of the glass from the blender to remove residues and incorporate the processor again.
- Peel the watermelon and cut it into chunks. Add the watermelon to the tomato, onion and pepper mixture. Also add the vinegar, salt and oil and blend until all the ingredients are properly integrated.
- Taste the gazpacho to rectify the salt point, then pour it into a glass container and store it in the fridge to cool.
- Decorate each glass with mint leaves and a raspberry and enjoy your delicious watermelon gazpacho!
- To obtain 500 grams of skinless watermelon, you must buy a piece of watermelon weighing at least 1 kg.
- When you take the gazpacho out of the fridge you will notice that it is separated into two parts. You just have to blend again and serve.
