  • 600 gr. watermelon
  • 500 gr. from tomatoes
  • 1/2 cup of extra virgin olive oil
  • 200 gr. crumb bread
  • 1 tooth of Garlic
  • 30 ml. balsamic vinegar
  • 100 gr. from Serrano ham
  • A pinch of black pepper
  • Salt

Preparation of the watermelon salmorejo

  1. Before starting you should know that the bread you are going to use must be stale. Twenty minutes before starting the recipe, place it in a container with a little water and let it soak to hydrate. Then drain it and transfer it to the blender glass.
  2. Wash the tomatoes well and chop them, you can leave the seeds and skin on them. Peel the garlic clove and chop it as small as you can. From the watermelon, for its part, you have to extract the core and remove the seeds. Reserve a slice and the rest of the ingredients put them in the blender and crush them.
  3. When everything is crushed, pass it through a strainer and use the blender again to emulsify the oil together with the vinegar, salt and a pinch of pepper. Once you have achieved the seasoning you like, cover with a film and take to the refrigerator to cool.
  4. Then wash the chives and slice them. If you are going to include the serrano ham in your recipe, chop it into cubes and the watermelon slice that you have reserved, cut it into cubes as well.
  5. When your watermelon salmorejo is very cold, distribute the ham cubes in deep plates, serve and decorate with the chopped chives, the ham and the watermelon cubes. Take advantage!
