Ingredients

For the vinaigrette:

  • 3 tablespoons olive oil
  • 1 tablespoon of balsamic vinegar
  • 1/2 tablespoon of honey
  • 1/2 tablespoon of sugar
  • 1 tablespoon of sesame seed
  • 1 tablespoon mustard
  • 1 pinch of salt

Preparation of the warm cod salad

  1. Let’s start making this warm cod salad by preparing all the ingredients. The ideal is to desalinate the cod in water from the night before. The next day, drain it in a colander and cut it into chunks.
  2. Now that you have the cod ready, wash, peel and cut the potatoes into slices. Then cook them in a pot of boiling water for 15 minutes, then drain and set them aside. Then we will use them again.
  3. Add water to the same pot again and add enough to reach the middle of the container. As soon as the water starts to boil you have to add the cod. Leave it for five minutes and then take it out, drain it and crumble it.
  4. While the cod is cooking and cooling, you can prepare the vegetables. Peel, wash and cut the onion into julienne strips. Then wash the peppers and tomato and also cut them into very thin strips.
  5. In a frying pan, add a dash of olive oil, ginger, salt and pepper to taste. When the oil is hot, add the onion and fry over medium heat until transparent. Then add the peppers and tomato and sauté for 5 more minutes.
  6. When the sauce starts to smell and is juicy, add the crumbled cod and the cooked potatoes. Let simmer for 10 minutes and with the pan covered so that the flavors are concentrated.
  7. As time passes, add all the ingredients for the vinaigrette in a bowl and mix so that they are properly integrated. Wash the arugula and cut it small, then place it in a salad bowl or bowl.
  8. When the stir-fry with cod is ready, add it on the bed of arugula, add the olives, top with the juice of the sauce and on top of the vinaigrette and mix everything. Your warm cod salad is ready! Run to try it!
