  • 2 branches of celery
  • two apples red
  • 8 romaine lettuce leaves
  • 1 cup of walnuts
  • 200 gr. red grapes
  • 1/2 cup of natural vegetable yogurt
  • 1/2 cup vegan mayonnaise
  • 1/2 lemon
  • 1/8 freshly ground black pepper
  • 1 tablespoon mustard
  • A pinch of coarse salt

Vegan Waldorf Salad Preparation

  1. To begin, the first thing you are going to do is prepare the dressing by mixing the vegetable yogurt, vegan mayonnaise, black pepper, coarse salt and mustard until you have a homogeneous sauce.
  2. Separate the lettuce leaves and soak them for five minutes in water with a little white vinegar. After time, drain them, dry them and cut them into thick julienne.
  3. Put a pan on the fire and when it heats up, add the walnuts to toast them a little for a few minutes. When you see them take on some color, put them aside and, once cool, chop them up. Reservation.
  4. Separate the celery from the leaves and wash the stalks that you are going to use. Then, with a potato peeler, remove the outer strands and cut it into dowels no larger than one centimeter.
  5. Wash the apples, remove both the core and the seeds and chop them the same size as the celery. Sprinkle with the juice of half a lemon and set aside. Then wash the grapes, cut them and remove the seeds.
  6. Next, combine the celery, lettuce, apples, grapes, walnuts, and dressing in a large bowl and let the salad sit for a few minutes in the refrigerator to cool. Nothing has to envy the original recipe. Take advantage!
