  • 30 ml. Of olive oil
  • 700 ml. of water
  • 1 tablespoon of salt
  • 1/2 tablespoon of white pepper
  • 1/2 tablespoon of nutmeg
  • 6 tablespoons of evaporated milk

Preparation of vichyssoise without potato

  1. Cut the leeks, after having washed them well under running water, but only the white part, the green part, you discard.
  2. Put it to fry in a pot with the olive oil so that it takes on a good color.
  3. When the pieces of leek begin to take a little color, cover it with the water and let it cook for between 10 and 15 minutes more or less.
