  1. We start by washing the leeks and chives well with cold water. Then we start to cut them into very small pieces. If it costs us, we can put them in the shredder and chop them in a moment. We peel and with the onion we carry out the same process, advising better to chop it in the shredder. Now we need the potato, which we will peel and wash well with cold water and cut into small pieces, without crushing it.
  2. In a saucepan we heat a little oil and add the vegetables at the same time. If you want you can also add a little butter. Stir everything well so that the ingredients are poached and mixed with the oil.
  3. Once ready, add the chicken or vegetable broth. Add a little salt and pepper and stir everything. We are going to cook it at medium power for 20 minutes so that the ingredients cook well, especially the potatoes.
  4. When that time has passed, and you verify that the ingredients are well cooked, pour everything into the glass of the blender. We start it so that it mixes everything well and then we put it in a bowl. In this we are going to use the mixer to finish mixing everything well in a kind of cream. Now go pouring the cream little by little, while you stir the cream with a spoon. When you finish pouring the cream, use the mixer again to mix everything into a fine and homogeneous cream. Put it in the fridge to cool it down.
  5. When going to serve it, before taking it out, we will fry the prawns in a pan, or on the grill. We will give them several turns so that they brown well. Divide the portions of the vichyssoise into bowls and place the prawns that correspond to each person.
