  • 300 gr. from leeks
  • 50 ml. Of olive oil
  • 50 gr. of butter
  • 700 ml. of water
  • 250 gr. from potato chopped
  • 1 tablespoon of salt
  • 1 tablespoon of white pepper
  • 1 tablespoon of nutmeg
  • 200 ml. from cream

Preparation of vichyssoise thermomix

  1. After washing the leek very well, you remove the green part and the white part, add it to the thermomix glass, crushing it for about 5 seconds at speed 6. Lower the remains to the bottom of the glass.
  2. Pour in the oil and add the butter, now programming at varoma temperature for 12 minutes with speed 1 so that everything is cooked.
  3. After the program, pour 200 ml. of water and program 1 minute with speed 7.
  4. Add the potato, salt and pepper and the rest of the water. The next program that you will start will be at 100º C with speed 1 for 20 minutes.
  5. Once finished, wait a bit, until the temperature is at 80º C, at which point you program for a minute at speed 7.
  6. Finally, add the cream together with the walnut for 8 minutes, with a temperature of 90º C with speed 3.
  7. Let it rest for a while in the fridge, so that it gains a little more consistency. When serving it, it is better to sprinkle a little chives or parsley on top.
