Ingredients

  • 8 wheat tortillas
  • 1 onion
  • 1 Red pepper
  • 1 green pepper
  • two avocados
  • 1 can of kidney beans
  • 1 can of crushed tomato
  • 1 lettuce
  • Fresh coriander
  • 150 gr. cheddar cheese
  • 1 chili (optional)
  • Salt
  • Pepper
  • Olive oil

Preparation of the vegetarian burrito

  1. We start by peeling and cutting the onion into strips. Add a dash of olive oil to a deep and spacious skillet and bring to medium low heat. When hot, add the onion and cook for a few minutes.
  2. Wash, remove the seeds and chop the red and green peppers into strips. After a few minutes, add them to the pan with the onion, salt and pepper, stir and cook for 5 minutes all together. Chop lettuce and cilantro to taste and reserve.
  3. If you are adding a spicy touch to your vegetarian burrito, then wash the chili, remove the seeds and cut into slices or strips. Put in the pan together with the crushed tomato, stir and touch the salt and pepper. Let everything cook over low heat for 15 minutes.
  4. After this time, add the previously drained canned beans, stir and cook for 2 minutes. Turn off the heat, add fresh coriander to taste and the grated cheese, stirring until melted.
  5. Heat the wheat tortillas over low heat and fill them with the mixture of vegetables and cheese, lettuce to taste and two slices of avocado. This veggie burrito is simply amazing!
