  • one pumpkin of 1 kg.
  • two onions
  • 4 teeth of Garlic
  • one Red pepper
  • two carrots
  • 100 gr. of tofu
  • 2 sprigs of fresh parsley
  • 150 gr. from walnuts chopped
  • 100 gr. brown sugar
  • 1 cup brandy
  • 3 tablespoons olive oil
  • Salt
  • Ground black pepper

Preparation of vegetarian stuffed pumpkin

  1. To fill this pumpkin, the first thing you should do is preheat the oven to 180 ° C. Then wash it, cut it in half and remove the seeds.
  2. Now place it on a tray, sprinkle it with brown sugar and brandy and put it in the oven for 30 minutes or until it softens. We are going for the filling, then we will remove the meat from the pumpkin.
  3. Peel the garlic and onions and cut everything into squares. Now wash the pepper, remove the seeds and julienne it. Peel the carrots and cut them into small cubes. Booking.
  4. Next, crumble the tofu and wash and cut the parsley and place the carrots that you have cut before in a pot with enough water to cover them and leave them on the fire for 15 minutes. Later, when they are tender, you have to drain them. Reserve everything.
  5. Now heat a little olive oil in a pan and add the onions, add a little salt and let it fry for four minutes. When they start to brown, add the garlic and mix. When two more minutes have passed you have to add the pepper.
  6. Cook for eight minutes, then add the tofu to the skillet. Mix it all together to make the flavors blend and leave it on the heat for five minutes. Take it off the heat.
  7. If the pumpkin has already been in the oven for half an hour, it is time to remove it. Remove the pulp from the inside with the help of a spoon and gradually place it in a bowl. Then, mash it with a fork and add the sauce that you made before.
  8. Finally, also made in this bowl the carrots, the chopped walnuts, a little pepper and rectify the salt. Fill the pumpkin and take it to the oven for 10 more minutes. Afterwards, garnish it with the parsley and your veggie stuffed squash is ready. Enjoy it!
