What better way to eat chips and vegetables than with a delicious Vegetable stew with French fries.

Ingredients

½ cauliflower
200 gr. from green beans
8 asparagus whites
two carrots
4 artichokes
2 sheets of chard
200 gr. from spinach
½ lemon
Olive oil
Salt
Parsley
50 gr. Of flour
two eggs
two potatoes

Vegetable stew recipe with french fries

Remove the bottom from the asparagus and wash well. Then put them to cook for about 10 minutes in water with a little salt. On the other hand, remove the leaves and the top from the artichoke. Then spread it with a little lemon and put it in a saucepan with water and a little salt and parsley. It has to cook for 15 minutes. When both vegetables are ready, drain them, to save them for later.
While we are going to separate the cauliflower into bunches, cut the beans in half, slice the carrot and remove the stalks from the chard that you will slice. Put all this to steam for about a quarter of an hour, until it is very tender.
Cook the chard stalks and spinach for about 5 minutes. Then strain them and drain well.
Beat the eggs with a little salt, flour a plate and put a frying pan on the fire with oil. Make balls with the chard and spinach stalks, bathe them in the egg, batter them and then fry in a pan. When you finish making them, cover with water and add the rest of the vegetables. Let everything be done for 10 minutes.
Now peel and chop the potatoes in the shape of French fries. You fry them in a pan and distribute the different servings to enjoy this dish.
