  • 1 kg. vegetable stew
  • 250 gr. breast of chicken
  • two eggs
  • 1 onion
  • 3 teeth of Garlic
  • 1 glass of white wine
  • 3 glasses of vegetable broth
  • Olive oil
  • 1 dessert spoon of sweet paprika
  • Ground black pepper
  • Salt

Preparation of the vegetable stew with chicken

  1. To start preparing this delicious vegetable stew with chicken, peel the onion and garlic cloves and chop everything as finely as you can. Next, cut the chicken breast into medium pieces, removing any possible remains of fat that it may contain and reserve it.
  2. Pour a background of olive oil into a pan and heat it over low heat. Once it is very hot, sauté the onion and garlic cloves. Add a little salt and, when it begins to poach, take the pan off the heat for a moment and add the sweet paprika.
  3. Stir well and return the pan to the heat. Quickly add the chicken meat so the paprika does not burn. Increase the heat to medium power and sauté all the ingredients for about four minutes. Pour in the white wine and turn the heat up to maximum. Wait four to five minutes for the alcohol to evaporate.
  4. On the other hand, put water in a pot and, when it starts to boil, add the eggs. They have to stay for fifteen minutes.
  5. While you wait for the eggs to cook, add three glasses of vegetable broth to the pan with the chicken and, once it comes to a boil, add the vegetable stew. We have decided to buy it made to save time.
  6. Now add a little salt and black pepper and let all the ingredients cook together for fifteen or twenty minutes. When you see that all the vegetables have become tender and that the broth has reduced, turn off the heat.
