Ingredients

  • 1 onion
  • 4 teeth of Garlic
  • two tomatoes red
  • 500 gr. ribs
  • two carrots
  • 4 ears
  • 2 potatoes
  • 2 cups of peas
  • 1 cup of kidney beans
  • 8 cups of water
  • 1 teaspoon oregano
  • 2 tablespoons fresh basil, chopped
  • Pepper
  • Salt

Preparation of Colombian vegetable soup

  1. Before starting, cut the ribs into chunks with a sharp knife, season with salt and pepper and set aside.
  2. Peel the garlic cloves and mash them in a mortar, the onion chop into squares. Peel the carrots and potatoes after washing, cut them into small pieces, just like the tomato. Cut the ears into chunks. Reservation.
  3. In a large pot, heat the olive oil and add the onion with a little salt. When you see it transparent, add the garlic, stir well and then add the ribs.
  4. When they start to brown, add the water, salt to taste and cook for 15 minutes.
  5. When it comes to a boil, remove all the foam that will rise to the surface. Then add the carrots, potatoes, tomato, peas, beans, corn on the cob, chopped basil, pinch of pepper and oregano.
  6. Once you have stirred all the ingredients, cover and cook for an hour and a half over low heat. You can add a little more water if it gets too dry during cooking.
  7. After time, rectify the salt again and if you are satisfied with the flavor, your Colombian vegetable soup will be ready to eat hot. Enjoy it!
