- 1/4 kg. salted pork rib
- 1/2 cup of chickpeas dry
- one onion
- one leek
- 4 teeth of Garlic
- two carrots
- 3 potatoes
- one zucchini
- ½ cup of green beans
- 150 gr. from pumpkin
- ½ small cabbage
- 4 pieces of pineapple corn
- 1 bunch of parsley
- 250 ml. meat broth
- 1/2 teaspoon oregano
- 1 teaspoon of sweet paprika
- Olive oil
Canarian vegetable stew preparation
- Before starting to prepare the soup, place the pork ribs in a container of water to desalt them for 12 hours. Once desalted, separate and chop them.
- Place the chickpeas in another container and cover with water. You should soak them for 12 hours as well. After time, rinse and drain.
- On the day of preparing your pot, wash all the vegetables. Chop the onion, the white part of the leek, the garlic and the parsley as small as you can.
- Dice carrots, potatoes and squash into small cubes after peeling. Cut the zucchini to the same size and julienne the cabbage. Also chop the beans into 3 pieces each.
- Next, prepare a mash by crushing the peeled garlic, parsley, a little salt and a drizzle of olive oil in a mortar.
- Add two tablespoons of olive oil to a large pot and when it is hot, cook the onion. When it is transparent add the leek, carrots, cabbage, beans and sauté for a few minutes.
- Add the chopped ribs, mix to integrate and later season with a little salt, oregano and sweet paprika. Mix quickly and then add the broth, the mash and 3 strands of saffron.
- Give a couple of turns, add the chickpeas, the corn, cover with water and cook for 45 minutes. When the legumes are soft, add the potatoes and cook for 15 more minutes. Rectify the salt before removing from the heat.
- Before serving, let your canary vegetable stew rest for 15 minutes. Take advantage!
