Ingredients

Preparation of vegetable consommé

  1. Let’s start preparing the ingredients for our vegetable consommé: Peel the onions, cut them into two parts and with a knife make holes in each piece so that it takes out its flavor during cooking.
  2. Cut the stem of the leeks into two parts, as well as the celery sticks. Also chop the pepper into two pieces and peel it. Cut the pumpkin into pieces and remove the skin.
  3. Peel the potatoes and carrots and cut them into medium squares. Cut the zucchini in the same way and leave the skin on it. Cut the cilantro finely. Lastly, remove the first layers of the cabbage and keep it whole.
  4. Add 1 liter of water to a large pot and add the onion, bell pepper, leek, coriander, celery, garlic cloves and salt to taste. Heat over high heat to bring the water to a boil.
  5. When the preparation begins to boil, lower the heat to medium heat and cook the vegetables for 20 minutes with the pot covered and without the water drying out.
  6. When the time has passed, remove all the ingredients from the pot and blend them in the blender with a cup of broth until you have a homogeneous mixture.
  7. Pour the shredded vegetables into the pot and add the carrot and pumpkin. Cook over medium high heat for 10 minutes.
  8. Add the potatoes, zucchini and cabbage and simmer until the potatoes have softened. Then rectify the salt and that’s it. Now you can serve your delicious vegetable consommé!
