- 12 precooked lasagna sheets
- 1 zucchini
- two carrots
- 1 eggplant aubergine
- 200 gr. from mushrooms
- 200 gr. from spinach cooked
- 100 gr. grated cheese
- 5 tablespoons of olive oil
- 2 tablespoons oregano
- Sauce tomato
Preparation of vegetable lasagna
- First of all, you should put the oven on at 180º C so that it reaches the ideal temperature.
- Next, cut the zucchini in half and peel it carefully, then cut it into slices. With the aubergine you will do the same, trying not to have too thick slices.
- The carrot will be better than grated, although you can also count it in slices if you wish.
- All these ingredients are going to be thrown into a pan with the oil so that they brown a little and are not so raw.
- Now clean the mushrooms under the tap water and cut them into slices, which you are also going to fry a bit so that they take on color.
- In the case of spinach, what you will do is mash them well.
- Spread the bottom of the baking tray that you are going to use with oil and place a layer of eggplant aubergine and cover it with béchamel, put a sheet of lasagna and then put the carrot together with the spinach, cover again with béchamel.
- Another layer of lasagna and now put the mushrooms with the zucchini and a layer of tomato sauce. Keep doing this until you have several layers.
- Finally, cover everything with the grated cheese and sprinkle the oregano on top. Bake for 15-20 minutes or so.
