The vegetable fajitas It is a very healthy and nutritious dish, which is extremely simple to prepare.
- 2 corn cakes per person
- two Red peppers
- two green peppers
- two onions
- 3 teeth of Garlic
- 2 chillies
- 225 gr. from mushrooms
- Sauce tomato
- Olive oil
Vegetable fajitas recipe
- Start by peeling the onion, wash it under tap water to reduce its tear effect and chop it into very small pieces. Do the same with the garlic cloves.
- You put both ingredients to fry in a frying pan with a good drizzle of olive oil.
- Now you are going to remove the seeds from the peppers and cut it into strips. The chillies are also cut into strips and both ingredients are added to the pan when the onion has browned. Stir well and let it cook for 10 minutes.
- Meanwhile, wash the mushrooms to remove the earth and cut them into slices, or into cubes, as you prefer. After 10 minutes you add them and cook it all together over a low heat.
- When the mushrooms take on a little color, pour tomato sauce into the pan and stir to mix well. Cover and fry everything for about 5 minutes at medium power, with which you will have the filling ready.
- Now you just have to add this filling in the fajita and roll it up so that it is ready. Make as many fajitas as you want or for all the guests you have.
