Ingredients
- 12 corn tortillas
- 200 gr. from Red pepper
- 200 gr. from green pepper
- 200 gr. from onion
- 175 gr. carrot
- 155 gr. cucumber
- Grated cheese
- Sauce tomato
- Pepper
Preparation of vegetable enchilada
- Start by peeling the onion, wash it under running water so that your eyes don’t water so much and cut it into quarters, to put it into the shredder and cut it into very small pieces.
- You peel the carrot, wash it well under running water and grate it well or cut it into slices and then cut it into small cubes.
- Wash the peppers, cut them into strips or cut them into rings that you pass through the mincer so that there are also small pieces.
- You peel the cucumber, you also wash it, and you are going to cut it into cubes.
- Put the oven on at 180º C.
- Understand the enchilada and fill it with a little tomato sauce and on top of this sauce you put the vegetables. Roll up and place in a source that can be used for ovens.
- Top it with a little fried tomato with grated cheese, in the amount that you like the most, and sprinkle a little pepper, also being able to add a little parsley.
- Bake for about 20 minutes and ready to serve.
