- 16 dumplings wafers
- 150 gr. from carrots
- 150 gr. from zucchini
- 100 gr. from mushrooms big
- 100 gr. chives
- 1 egg
- 30 gr. grated light cheese
- 2 teaspoons olive oil
- Ground black pepper
Preparation of the vegetable dumplings
- Thoroughly wash the mushrooms, zucchini, carrots, and chives. Peel the last three vegetables and remove the heart from the chives as well. Cut everything into small pieces and preheat the oven to 180ºC.
- Put these vegetables in a microwave-safe container and add the olive oil and salt and ground black pepper to your liking. Heat them in the microwave for five minutes, stir and heat them for another five minutes.
- Meanwhile, put the wafers on a flat work surface. When the vegetables are ready, fill the wafers with a little of them in the center and sprinkle with grated cheese. Moisten the edges of the wafers for a better seal and close the ends with a fork. This way they won’t open while they cook.
- Put the empanadillas on the baking sheet, lined with greaseproof paper or aluminum foil. Beat the egg and paint the dumplings with it. Use a kitchen brush.
- Put the tray in the oven so that the empanadillas are made for ten minutes until they are golden brown. And ready! All you have to do is turn off the oven, set aside and serve your delicious vegetable dumplings. We hope you like them!
