- 15 sheets for cannelloni
- two leeks
- two carrots
- 2 chives
- 250 ml of White wine
- Grated cheese
- Olive oil
- Salt
Preparation of the vegetable cannelloni
- Start by boiling the slices of the cannelloni. It is advisable to do it according to the manufacturer’s instructions because each brand has specific characteristics.

- Wash the carrots and cut them into very small pieces. Do the same with chives and leeks.
- Put a splash of oil in a frying pan and when it is hot add the carrots, leeks and chives. Season to taste.
- Once the vegetables are poached, it is the ideal time to add the wine. It can be white or sherry, either of which goes great with vegetable cannelloni.
- Let the wine reduce for a few minutes over high heat and then remove the vegetables with a slotted spoon, avoiding taking the oil with you.
- Preheat the oven to 180ºC, and while it heats up you can assemble the cannelloni.
- Grease the baking tray you are going to use with olive oil.
- Now you have to assemble the cannelloni: In each sheet add the scrambled vegetables and make a roll. You must close them well in the center so that they do not open.
- You put them on the baking sheet, and finally, cover them with a good amount of grated and baked cheese. You can also prepare a bechamel to cover the cannelloni with the cheese.
- Bake the cannelloni for 20 or 30 minutes and they will be perfectly gratin. It depends on each oven so it will be necessary to control them to remove them at their ideal point. Once they have the cooking you want, the vegetable cannelloni are ready to serve. Take advantage!
