- 1 kg. sauce tomato
- 1 glass of White wine
- 1 onion
- two carrots
- two aubergines
- 80 gr. textured soy
Preparation of the vegan bolognese sauce
- The first thing we have to do is hydrate the textured soybeans. All you have to do is leave it in a glass of water, then we will spend it.
- Now take all the vegetables and wash them, peel them and cut them as small as you can. You have to fry them and it is better to do it little by little. Start with the onion and carrot. Put them in a pot with a little oil and, as soon as they are poached, take them out and put them in a bowl.
- In the same pot that you used, now add the two aubergines and let them turn brown. Then put the onion and carrots back in and add the glass of white wine. Turn the heat up to high for five minutes to get the alcohol to evaporate.
- Now strain the soy and add it to the pot along with the vegetables. Also add the crushed tomato, salt and oregano and lower the heat to a minimum. Cover the pot and wait thirty minutes.
