Vegan ratatouille preparation

  1. To start, you need to preheat the oven to 230 °. Then wash the peppers well, remove the seeds, wrap them in aluminum foil, place them on a tray and roast for 30 minutes.
  2. After time, take them out and when they get warm, remove the skin, chop and reserve.
  3. While the peppers are roasting, peel the onion and garlic. Cut the onion into pieces and mash the garlic in a mortar.
  4. Make a cross incision in the upper part of the tomatoes, place a pot of water and when it starts to boil, boil them for 1 minute. Remove them with a slotted spoon and peel them. Cut them in half, extract the seeds and chop.
  5. Wash the aubergine and chop the same size as the tomato. Then wash the zucchini and slice them.
  6. Add two tablespoons of olive oil to a pan and sauté the onion along with half the garlic for 5 minutes. Add the herbs, tomato and cook for 15 minutes. Remove from the fire and reserve.
  7. Sauté the aubergines in the pan with a tablespoon of olive oil over medium heat until golden brown, drain and reserve on a plate. Add the roasted peppers and cook until soft. Also withdraw.
  8. Add another tablespoon of olive oil to the pan and brown the zucchini on both sides.
  9. Next, add the tomato mixture to an ovenproof dish and add the sautéed vegetables, salt and pepper and bake covered with aluminum foil for 15 minutes.
  10. Meanwhile, sauté the basil cut into strips together with the rest of the garlic, a drizzle of olive oil and salt.
  11. Remove your vegan ratatouille from the oven, add the basil dressing, mix and it will be ready. Take advantage!
