  • 175 gr. pastry flour
  • 250 gr. soy yogurt
  • ½ sachet of yeast
  • 155 gr. brown sugar
  • 2 ripe pears
  • 1 handful of pistachios
  • 2 tablespoons ground cinnamon
  • 50 ml. Of olive oil

Preparation of vegan muffins

  1. The first thing you should do when preparing these vegan muffins is to preheat the oven to 190ºC. The dough will be ready very soon so, if the oven is hot, you won’t waste a minute and you can put them to bake right away. With that said, let’s go for the dough.
  2. Put the sifted flour together with the yeast in a large bowl. Also add the cinnamon powder and stir these ingredients to mix well.
  3. In another bowl you have to put the olive oil, the sugar and the yogurt and stir until a homogeneous mixture is formed.
  4. Incorporate the contents of the first bowl in this second and mix gently, while stirring, so that the muffin dough forms. Do it little by little, so that no lumps form and all the ingredients are mixed well.
  5. Once the dough is ready, add the chopped pistachios and pears, already peeled and also cut into small pieces. Mix everything well, so that these last ingredients are well distributed throughout the dough.
  6. Go filling the holes in your cake pan with the mixture but, pay attention, if the mixture of some mixes with that of others when they increase in volume you will not be able to detach them.
  7. Put the molds in the oven and in about 20 minutes or a little more they should be done. To check, you just have to poke them with a toothpick and, if it comes out clean, these vegan muffins are ready. Take them out of the oven and let them cool. To enjoy!
