  • 300 gr. from mushrooms
  • 50 gr. vegetable margarine
  • 1 vegetable stock cube
  • 4 tablespoons of traditional or toasted flour
  • Lemon juice
  • Fresh thyme
  • Vegetable oil
  • Pepper
  • Salt

Preparation of the vegan mushroom cream

  1. Rinse the mushrooms well to remove all the dirt they contain, and drain them as much as possible.
  2. Put the butter in a pan to heat, and when it is completely melted, sauté the mushrooms in it.
  3. When they have changed color and are almost ready, add a little lemon juice. Stir well, and remove the pan from the heat.
  4. If you are going to use traditional flour, toast it first over low heat in a pan, without stopping stirring at any time. It should take on a tone similar to that of a light brown. You can also use flour already toasted, as we have indicated in the ingredients.
  5. Add the toasted flour to a pot and then dissolve the vegetable stock cube in a cup of hot water. This broth should be gradually incorporated into the flour, until you get a fairly thick mixture.
  6. Keep the mixture over low heat all the time, and don’t stop stirring.
  7. Beat ¾ of the mushrooms with the help of the electric mixer, until you get a completely dissolved paste. Reserve the rest of the mushrooms for garnish.
  8. Add the mushroom paste to the pot containing the flour and broth mixture, and stir well. Cook all the ingredients together for 10 minutes, incorporating lemon juice, vegetable oil and salt and pepper to your liking.
  9. Once you have your vegan cream of mushroom soup ready, serve it on plates adding a few whole mushrooms to each and a few fresh thyme leaves. You can now savor this exquisite dish, enjoy it!
