- 50 gr. icing sugar

- 40 gr. sunflower oil
Preparation of vegan almond cookies
- Put all the ingredients in a bowl, except the almonds, which you will have to add later. Put them all but pour the flour last, little by little and gently, so that no lumps are made.
- As soon as you have them, mix them with the help of a wooden spoon, and once they are integrated, work the dough with your hands, adding a little more flour if you see that it sticks between your fingers.
- Handle the dough and make a big ball out of it. Then wrap it in plastic wrap and refrigerate for about half an hour.
- After this time, place it on parchment paper, cover it with more paper and flatten it with the help of a roller until it is about half a centimeter thick.
- Turn the oven to 180ºC and, while you wait for it to heat up, take small portions of the dough and make small balls with them.
