  • 1 turkey of 2 kg.
  • 200 gr. dried apricots
  • 150 gr. pitted prunes
  • 100 gr. soaked raisins
  • 100 gr. from walnuts peeled and chopped
  • 50 gr. pine nuts
  • two onions
  • 3 carrots
  • 300 gr. chives
  • two apples
  • 1 head of garlic
  • 1 bay leaf
  • 1 sprig of thyme
  • 1 teaspoon ground cinnamon
  • 1 glass of white wine
  • 2 glasses of brandy
  • 2 glasses of chicken broth
  • Olive oil
  • Ground black pepper
  • Salt

Preparation of the turkey stuffed with nuts

  1. The night before you prepare the turkey, pour a glass of brandy into it and store it in the fridge. You will have to start preparing it the next day.
  2. Start by peeling and chopping the onions and apples and pouring a little oil into a skillet. As soon as it is hot, you have to sauté the onion with a pinch of salt and, as soon as it is golden brown, you will have to add the apples, apricots, plums and all the nuts. Wait five minutes and add the cinnamon and the other glass of brandy. Wait five more minutes.
  3. Put the oven to preheat to 200ºC and that way it will heat up. Meanwhile, let’s stuff the turkey. Cut it in half and open it like a book. Fill it with the stew you just made and the juice that is left in the pan. Next, tie both parts of the turkey together with oven-safe twine.
  4. Now spread the turkey with a little olive oil, add salt and ground black pepper to your liking and place it in a suitable baking dish with the bay leaf, the thyme and the minced garlic. Water it all with the wine and put the tray in the oven to cook for an hour and a half.
  5. Open the oven from time to time and water the turkey with the juice that remains in the pan. Cook the chives and carrots separately for ten minutes and, once they are done, drain them well.
  6. Chop these vegetables and thirty minutes before the turkey is done, open the oven and incorporate them into the pan around the turkey. If you want, you can use oranges for this step. As soon as all the time passes, you will have your turkey stuffed with nuts ready. It is really exquisite!
