Ingredients:

  • 1 boneless turkey thigh for stuffing
  • 2 teeth of Garlic
  • 1 onion
  • 200 gr. from spinach baby
  • 200 gr. from goat cheese or ricotta
  • 1/4 cup raisins (optional)
  • 237 ml. from White wine
  • 1 teaspoon oregano
  • 2 bay leaves
  • 2 tablespoons cornstarch
  • 4 tablespoons oil
  • 1 tablespoon butter
  • Salt and pepper to taste

Preparation of the turkey stuffed with spinach

  1. Before starting, salt and pepper the turkey and let it rest while you prepare the filling. Peel and dice the onions and garlic, then wash the spinach leaves, drain and reserve.
  2. Heat a tablespoon of olive oil in a pan over medium heat and add the onion. Let poach, add the garlic, spinach and raisins when the onion begins to brown. Salt and pepper to taste and cook for 3 minutes.
  3. Remove from heat and add the goat cheese. Mix with a spoon so that everything is integrated, add the oregano and reserve. Preheat the oven to 180 ° C.
  4. Then spread the turkey and add the spinach filling in the center. Roll it up carefully and tie it with a kitchen string, start at one end and patiently tie a kind of mesh around the meat so that the filling does not come out.
  5. Place the turkey on a tray that you can take to the oven, drizzle with olive oil, salt, pepper and cover with the white wine. Add the bay leaves and bake for 35 minutes.
  6. Once done, remove the tray from the oven and let the turkey rest for 10 minutes before carving. Meanwhile, in a pot pour the broth in which the turkey was cooked, so you will prepare the sauce.
  7. Add the cornstarch previously dissolved in a little cold water to the pot, add the butter and stir. Cook over medium heat until it begins to thicken, stirring frequently to avoid sticking to the bottom.
