- 1 turkey of 3 kg.
- 750 gr. from mince beef
- 1.5 kg. from mince pork
- 1/2 kg. bread crumbs
- 10 potatoes little
- two aubergines
- 2 zucchini
- 6 carrots
- 1 bowl of milkcreamgives
- 150 gr. pine nuts
- 50 gr. raisin
- two eggs
- 1/2 glass of cognac
- 1/2 glass of port
- 1/2 kg. cooked chestnuts
Baked stuffed turkey preparation
- Before starting, put the oven on at 180º C so that it reaches the ideal temperature. Next you have to put the breadcrumbs to soak in a bowl with the skim milk to soften them.
- Meanwhile, you can mix the minced pork and beef with the two beaten eggs. Salt and pepper to taste and mix until they have become a homogeneous mass.
- Having achieved this, proceed to mix the minced meat combination with the nuts, the cognac, the Port and the breadcrumbs, kneading non-stop with your hands until you get a dough with a smooth texture.
- Salt and pepper this filling to your liking again and knead again. Also take the opportunity to season the turkey and leave it ready.
- Now you have to proceed to put the stuffing, little by little, inside the turkey. Once you have put all the filling in, you will have to close the opening with some toothpicks so that the filling does not come out. Another alternative is to sew the hole with a thick thread such as wick.
- Then you should place the stuffed turkey on the baking sheet and cover it with aluminum foil to ensure that it cooks without burning.
- Put the turkey in the oven, it is recommended that you place it in the lowest part of the oven, so that it does not burn, it will take between 120 to 180 minutes, depending on the type of oven.
