Ingredients

  • 1 kg. from tuna cool
  • 1 onion dwelling
  • two tomatoes large
  • 10 limes
  • 3 sprigs of coriander
  • 1 ají limo or ají amarillo (optional)
  • Salt

Preparation of the tuna ceviche

  1. The key to a delicious tuna ceviche is buying fresh, quality fish. However, to avoid contracting anisakis, it is very important to freeze it for at least 24 hours. Before preparing this dish you must make sure that it is perfectly thawed.
  2. Start by peeling and slicing the onion very thinly. Place them in a container, add salt and cover them with warm water, letting it rest for 10 minutes, this process will reduce the intensity of the onion, allowing its flavor not to be too invasive on the plate.
  3. Meanwhile, dice the tuna and place it in a salad bowl or glass container. Also cut the tomato into cubes and chop coriander to taste, add everything to the fish container.
  4. Chop the ají limo or ají amarillo into very thin slices. This ingredient will give your tuna ceviche that characteristic spicy taste, but if you prefer, you can eliminate this ingredient.
  5. Once the onion has softened, strain it, wash it with cold water, and add it to the bowl with the rest of the ingredients. Add salt to taste, stir and squeeze approximately 10 limes until the juice covers all the ingredients. The citrus will marinate the fish allowing it to cook slightly.
  6. Cover and chill in the fridge for 10-15 minutes. It should not be marinated any longer or the tuna will lose its flavor and texture, becoming very hard.
