Ingredients

  • 1,500 kg of pig trotters
  • 1 big Onion
  • 4 teeth of Garlic
  • 4 sprigs of parsley
  • 1 leek
  • two carrots
  • 30 gr. from almonds ground
  • 400 gr. of puree tomato
  • 1 spoon of sugar
  • 2 bay leaves
  • 1 tablespoon of sweet paprika
  • 3 liters of water
  • 6 black peppercorns
  • 3 tablespoons olive oil
  • Salt

Preparation of pork trotters with tomato

  1. To start preparing this delicious recipe, the first thing you have to do is place the pig’s trotters in a saucepan, cover them with water and bring them to medium-high heat. Once they boil, drain them and discard the water.
  2. Put them back in the casserole, cover with water again but this time add a little salt, the peppercorns, the bay leaves and boil over medium heat for two hours. They should always be covered with water, if you have to add more, do it without fear.
  3. Once you check that they have softened, remove from the pan with a slotted spoon and reserve 2 cups of the cooking broth. Add the peeled garlic in a mortar and mash them together with the previously washed parsley. Add salt, add the almonds and mix.
  4. Next, peel the carrots and grate them on the coarse side of the grater, chop the onions and leek into small cubes.
  5. Heat the olive oil in a large skillet and fry the onion and leek with a pinch of salt for a few minutes. When the onion is translucent, add the carrots and sauté for a couple of minutes.
  6. When the onion begins to brown add the sweet paprika and stir for a few seconds. Add the tomato puree, the sugar and add a little salt again.
  7. After 5 minutes, pour in the broth that you reserved from cooking, add the mixture with garlic and parsley and add the trotters. Cook over low heat for 20 minutes.
  8. After 20 minutes, rectify the salt and your pork trotters with tomato will be ready to taste. Enjoy this delicacy!
