Ingredients
- 1 kg. pig’s trotters
- 1 leek
- two eggs
- 2 cloves of garlic
- 2 bay leaves
- 1 cup of flour
- Salt
- Vegetable oil for frying
Preparation of the breaded pig trotters
- When you go to buy the trotters, ask the butcher to make two cuts, one vertical and the other transversal, so they will be cut into 4 pieces.
- To start preparing these delicious breaded pig trotters, start by placing the trotters in a pot with water and add the bay leaf, the onion and the peeled garlic cloves, the previously washed leek and salt. Bring to the fire and cook for 2 hours.
- You must be attentive and fill the water every time it runs out. After checking that the trotters are already tender, remove them and put them to drain on an absorbent kitchen paper.
- When cool, bone them up and cut them into chunks if the chunks are too big. Then beat the eggs vigorously and add a little salt. Spread the flour on a plate.
- Next, pass the trotters first through the flour and then through the egg. Make sure they are well covered to prevent the oil from splashing out too much.
- Pour plenty of vegetable oil into a skillet and, when hot, fry in batches until golden brown on both sides.
