Preparation of zucchini and leeks omelette

  1. Beat the eggs in a bowl, then add salt to taste and reserve until ready to make the omelette.
  2. Wash the zucchini and cut it into medium cubes. Then cut the onion and the stems of both leeks into very small squares.
  3. Add a drizzle of olive oil to a large skillet and when hot, add the onion and leek and sauté over medium heat until both ingredients are poached.
  4. Add the zucchini to the skillet and sauté for ten minutes over medium low heat and with the pan covered.
  5. Then add the beaten eggs, cover the pan and let the mixture set over medium heat.
  6. When the eggs have set, turn the tortilla to cook it or the other side with the pan covered over low heat and for three minutes.
  7. When the zucchini and leeks omelette is ready, serve it on a tray, cut it into portions and serve with a slice of bread. Take advantage!
