Fresh spinach omelette recipe

Ingredients for four people:

  • 6 eggs big
  • 300 gr. from spinach fresh
  • one onion
  • 1 tooth of Garlic
  • 3 sprigs of parsley
  • 1/4 cup olive oil
  • Black pepper
  • Salt

Preparation of the fresh spinach omelette

  1. The first thing is to separate the spinach leaves from the stems and soak them with water and a tablespoon of coarse salt.
  2. After a few minutes, rinse the spinach, put it to drain in a colander, dry it and chop it.
  3. Peel the onion, cut it into julienne strips, then peel the garlic clove and dice it. Cut the parsley after washing it.
  4. Add two tablespoons of olive oil to a pan and add the onion to poach it, add a pinch of salt to speed up cooking.
  5. When it begins to brown, add the garlic, give a couple of turns and add the spinach. Once reduced, salt and pepper them and remove them from the heat.
  6. Beat the eggs in a bowl and, when they are well integrated, add pepper to taste. Rectify the salt if necessary.
  7. Next, drain the spinach stew to release the water, add it to the eggs along with the chopped parsley and stir until integrated.
  8. Add the rest of the olive oil in a frying pan and when it heats up, pour the mixture. Move the pan so that it spreads evenly and cook.
  9. When you see that the fresh spinach omelette is curdled on the surface, turn it over with the help of a plate and let it brown on the other side for a few more minutes. Enjoy it!
