Ingredients:

  • 8 scallops
  • 3 onions
  • 150 gr. Serrano ham
  • 230 ml. white wine
  • 1/4 cup breadcrumbs
  • 1/4 cup of homemade tomato sauce
  • 4 tablespoons of olive oil
  • 3 tablespoons fresh parsley (optional)
  • Salt to taste

Preparation of the Galician baked scallops

  1. If the scallops are fresh, start by placing them in a bowl of water and a tablespoon of salt. Let them soak for two hours, in this way you will remove the remains of sand that they may bring. Change the water at least 3 times.
  2. When you take them out of the water, drain them and open them carefully. If you are going to use frozen scallops, keep in mind that it is important that you thaw them from the day before.
  3. Chop the onion and the serrano ham into small cubes. Add the olive oil to a frying pan and when it is hot, fry the onions with a little salt over low heat, so that they do not burn. Preheat the oven to 180 ° C.
  4. When the onions are golden brown, add the chopped serrano ham, mix and cook for a couple of minutes. Pour in the white wine and when the alcohol has evaporated add the fried tomato, chopped parsley and let it cook for 10 more minutes.
  5. After time, rectify the salt and remove from the heat. Spread an aluminum foil on a tray or in a bowl and place the scallops on top. Fill them with the stew you just made and sprinkle with breadcrumbs.
  6. Then bake them for 15 minutes. If you like a crispy and well browned crust, grill it during the last two minutes of cooking.
