Ingredients for four people:

  • 1 round of beef of 1.5 kg. approximately
  • 400 gr. mushrooms
  • 1 large carrot
  • 1 large onion
  • 4 cloves of garlic
  • 1 glass of red wine
  • ½ liter of meat broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Extra virgin olive oil
  • Pepper
  • Salt

Preparation of roast beef in the oven with sauce

  1. Ask the butcher to clean the round well, removing all the fat, and tie it or place it on a mesh.
  2. At home, begin to peel the onion and cut it into julienne. Peel the garlic and cut it into slices. Do the same with the carrot.
  3. Salt and pepper the round to your liking and add a little extra virgin olive oil to a pot. Heat the oil and seal the meat all over for about ten minutes. Then take it out and reserve it.
  4. Sauté the onion, carrot and garlic in the same pot until well browned, ten minutes will be enough. Then add the bay leaf and the thyme and transfer the round to the casserole again. Pour the glass of wine.
  5. Increase the heat to maximum power so that the alcohol evaporates for two minutes and then cover everything with the broth that should be approximately half.
  6. Stir and transfer all the ingredients to a refractory dish and place it in the oven previously preheated to 220ºC. Once the broth begins to boil, lower the oven temperature to 190ºC. Continue roasting the round for an hour and a half more, turning it from time to time.
  7. After the hour and a half, take the meat out of the oven and wait for it to cool down a bit. If you think that the sauce is too thick, add a little water or broth if possible.
  8. Wash the mushrooms, cut them into pieces and sauté them in a pan with a little oil. When they are done, salt and pepper them to your liking and stir.
  9. Cut the meat, transfer it back to the source, bathe it with the sauce and add the mushrooms on top. Put the dish back in the oven for another ten minutes and that’s it! Now you can turn off the oven and serve your round of baked veal in sauce, mmm, how delicious! To eat!
