- When the onion and garlic are ready, raise the heat a little and add the glass of wine, stirring, season with salt and pepper to taste, then add the sausages and cook until the liquid reduces a little and the alcohol evaporates.
- Once the alcohol has evaporated, add the glass of broth and cook, over medium heat, for 10 minutes or until the broth reduces and becomes a slightly thicker sauce. Taste before removing from heat and touch up seasoning if necessary.
