- 4 tablespoons of butter
- 3 tablespoons vegetable oil
- 2 cups of milk
- 1 cup of rice flour (or wheat flour)
- 1 cup of cornmeal
- 4 eggs
- a pinch of salt
Preparation of crepes with corn flour
- The first step to start preparing the crepes is to melt the butter in the microwave for 30 seconds in a glass bowl. Reserve it.
- With electric rods beat the eggs until they foam. Then add the flour little by little without stopping beating, there should be no lumps.
- When you see that the mixture is well homogeneous, add the melted butter. Then integrate the milk, the pinch of salt and continue beating until everything comes together. If the crepe will be sweet, you can add a teaspoon of sugar.
- Place a non-stick pan on the heat and with the help of a soup ladle add the mixture you just prepared. Spread it well, remember that they should be thin.
- Cook each side of the crepe for about two minutes and when both sides are golden, take it to a plate. You must be careful, because if you are not careful they can burn you, they are done very quickly. Repeat the procedure until you finish with the mixture.
