  1. Start by removing the leaves and the top of the artichoke, and spread it with a dash of lemon. Then put it in a saucepan covered with water, a little salt and parsley, and cook for a quarter of an hour.   4. Separate the steamed vegetables, keeping the stalks. In that same water that you have used, put the leaves and spinach to cook for about 5 minutes.
  5. After that time, drain them well. Now beat the eggs, put the flour on a plate and a frying pan over the fire with oil. Chop the stalks and spinach, make some balls and pass them through the egg, then through the flour and then fry them in the pan. As you take them out, let them rest on a plate with absorbent paper, so they won’t be so oily.
  6. In that same pan, brown the ham or bacon cubes, although you can also use any type of meat that you like. While they are browning, peel the tomatoes, cut them into wedges and with a little water, crush them to get tomato sauce. If you want to save yourself this step, you can use a fried tomato brick.
  7. Add the tomato to the pan when the meat is browned and also the battered vegetables.
  8. Stir and let the tomato consume a little.
  9. After about 10 minutes, cover with water, add the rest of the vegetables and let it cook for 10 more minutes.
  10. And ready to eat and savor.
