A healthy and very good dish for when visitors are received at home. Will you hesitate when preparing it? Because it is really simple and also very delicious.
- 1 kg. lamb shoulder
- two carrots
- 1 onion
- 8 potatoes little
- 12 asparagus
- 250 gr. of beans
- 1/4 liter of White wine
- 2 bay leaves
- 1/2 liter of water
- Extra virgin olive oil
Preparation of vegetable stew and lamb
- First of all, cut the shoulder into cubes. You can also ask the butcher to get them ready.
- Salt and pepper them and let them rest a little in the fridge, so that the seasonings adhere well to the meat. Then flour them and sauté them in a pan with a little oil, so that it takes on a little color.
- Peel the onion and chop it well, after washing it if you want to reduce its tear effect. In the case of carrots, you put them in the shredder after peeling and washing them well.
- Put both ingredients in a pot with a drizzle of oil so that they are poached.
- When the onion takes color add the two bay leaves.
- While you are peeling the potatoes and dicing them. A few minutes after you added the bay leaves, add the potatoes along with the lamb meat.
- Pour in the white wine and allow it to consume a little at medium power.
- Then add the water, season a little, cover and cook for a quarter of an hour. If you use a pressure cooker, about seven minutes will suffice.
- When you have everything in the pot ready, peel the asparagus and cut them into pieces, adding them to the stew along with the beans.
- Cover and let rest for another five minutes before serving. You will already have your vegetable and lamb stew more than ready to serve and enjoy it.
