- 200 gr. from rice
- one zucchini
- one carrot
- two potatoes
- one onion
- one leek
- one celery
- one Red pepper
Preparation of the vegetable consommé with rice
- Start by preparing all the ingredients for the vegetable consommé with rice. To do this, peel the onion and cut it into very small squares, do the same with the leek, garlic and celery.
- Cut the paprika in half, peel it, and then make it into cubes. Peel the carrots and potatoes and cut them into medium cubes and you have to prepare the zucchini in the same way without removing the skin. We started cooking!
- In a pot add a little olive oil and when it is very hot, sauté the onion and garlic over medium heat for five minutes or until they are transparent.
- Then add the leek, bell pepper, celery, potatoes, carrot, zucchini and salt to taste. Sauté for ten more minutes over medium heat.
- Add a liter of water to the pot and turn the heat to high to bring it to a boil. Once the water reaches boiling temperature, lower the heat to medium, cover the pot and let the broth cook for 25 minutes.
- After time, rectify the salt, raise the heat to maximum again and add the rice. When the broth boils, lower the heat to medium heat and cook for another fifteen minutes or until you notice that the rice is tender.
- It is important that from time to time you stir the preparation to prevent it from sticking inside the pot. When the rice has softened, your vegetable consommé with rice will be ready, serve hot and enjoy. It’s great!
